Our story begins in the quietest hours of the night. While the city sleeps, our kitchens are warm and bright. At 3 AM, our bakers start shaping dough by hand and filling the ovens. It is a slow, rhythmic discipline, driven by a simple promise: to serve only what was crafted today, fresh and honest.

The 27 Layers of a Croissant

We believe in patience, precision, and layers. Achieving the perfect shatter-crisp texture of our signature croissant requires hand-lamination of butter dough to build exactly 27 individual layers. It is a painstaking process of chilling, rolling, and folding that cannot be rushed or automated.

The 72-Hour Fermentation

Our bread is a study in fermentation. We work with a naturally leavened wild starter, giving every loaf of sourdough up to 72 hours to slowly rise and develop flavor. This extended fermentation breaks down gluten naturally, yielding a tender, easily digestible crumb under a bold, caramelized deck-baked crust.
